  • 1 cup apple cider vinegar Balances sweetness with acidity.
  • 1 packet liquid pectin Crucial for achieving the right jelly consistency.

Method
 

Preparation
  1. Remove seeds and stems from the peppers and roughly chop into 1-inch pieces.
  2. Place chopped peppers in a food processor and pulse until very finely chopped.
  3. Measure out 2 3/4 cups of the pepper mixture.
Cooking
  1. In a medium Dutch oven, combine chopped peppers, sugar, and vinegar.
  2. Bring to a full rolling boil, stirring for 1 minute.
  3. Stir in the pectin and return to a full rolling boil for another minute.
Finishing Touches
  1. Remove from heat, skim off foam, and ladle into clean, sterilized jars.
  2. Cool the jars to room temperature, seal them, and store for later use.

Notes

For best results, choose fresh, ripe peppers, and ensure jars are well sterilized. This jelly makes a great homemade gift and is perfect for various occasions.
