  • 2 teaspoons yeast (instant or active dry) The leavening agent that helps the dough rise.
  • 1 teaspoon salt Enhances flavor and controls yeast activity.
  • 1 cup whole wheat flour (or spelt, or more all purpose) Provides nutrition and texture to the buns.
  • 2 cups unbleached all purpose flour (or bread flour) Helps achieve a soft and airy structure.
Optional Toppings
  • 1 egg egg wash For topping.
  • to taste sesame seeds Adds color and a delightful crunch.

Method
 

Preparation
  1. Preheat the oven to 400°F for baking the buns.
  2. Grease or line a large half-sheet baking pan with parchment paper.
  3. Combine warm water, yeast, and honey until dissolved.
  4. Stir in salt, olive oil, whole wheat flour, and 2 cups of all-purpose flour to form a soft dough.
  5. Beat with a stand mixer for a couple of minutes or mix by hand, adding up to ½ cup flour to reduce stickiness.
  6. Gather the dough into a ball and let it rest for 10 minutes in the bowl.
  7. Transfer dough to a floured surface and knead a few times.
Shaping and Rising
  1. Press dough into a flat rectangle and cut into 12 pieces for hamburger buns or 8 for larger ones.
  2. Shape pieces into balls and flatten edges slightly for hamburger buns; elongate for hot dog buns.
  3. Place shaped dough on the prepared pan and let rise for 10 to 15 minutes without covering.
  4. Optional: For sesame seed topping, brush buns with an egg wash and sprinkle with sesame seeds before baking.
Baking
  1. Place in the oven and bake for 15 to 17 minutes until golden brown.
  2. Remove from oven and let cool on a wire rack before slicing.

Notes

For the best results, use warm water to ensure the yeast activates properly and be careful not to add too much flour when kneading.
