Preparation
- Preheat the oven to 350 degrees F.
- Wrap the bottom of a 9-inch springform pan in foil.
- In a food processor, pulse graham crackers, sugar, and cinnamon until fine.
- Add melted butter to the crumb mixture and mix until combined.
- Press the mixture into the springform pan and bake for 10-15 minutes.
- Lower the oven temperature to 300 degrees F.
Cooking
- Beat the cream cheese until smooth, then mix in granulated sugar, brown sugar, and salt until creamy.
- Incorporate eggs one at a time to maintain a smooth texture.
- Mix in pumpkin purée, sour cream, vanilla, pumpkin pie spice, and flour until well combined.
- Pour the cheesecake filling over the crust.
- Bake in a water bath for about 1 hour until set.
- Cool gradually in the oven for 1 hour, then transfer to room temperature and chill overnight.
Serving
- Serve with whipped cream on top, if desired.
Notes
Make sure the cream cheese and eggs are at room temperature for best results. Chilling overnight enhances the flavor.
