Method
 

Preparation
  1. In a medium saucepan, combine all ingredients and bring to a boil over medium high heat.
Cooking
  1. Once boiling, reduce the heat to low and cover the saucepan.
  2. Stir occasionally to prevent sticking or burning, and continue cooking until thickened, about 30 minutes.
Serving
  1. Remove from heat and let cool completely. The pumpkin butter will thicken as it cools.
  2. Taste and adjust seasoning if needed.
  3. Transfer to an airtight container and store in the refrigerator.

Notes

Great for toast, oatmeal, pancakes, or a homemade gift. For smoother texture, blend after cooling. Don't skip tasting before storing!
