Preparation
- In a medium saucepan, combine all ingredients and bring to a boil over medium high heat.
Cooking
- Once boiling, reduce the heat to low and cover the saucepan.
- Stir occasionally to prevent sticking or burning, and continue cooking until thickened, about 30 minutes.
Serving
- Remove from heat and let cool completely. The pumpkin butter will thicken as it cools.
- Taste and adjust seasoning if needed.
- Transfer to an airtight container and store in the refrigerator.
Notes
Great for toast, oatmeal, pancakes, or a homemade gift. For smoother texture, blend after cooling. Don't skip tasting before storing!
