Preparation
- Put your pasta on to boil according to package instructions.
- Warm the oil in a skillet over medium heat.
- Stir in chopped courgettes and garlic, cook for 2-3 minutes until softened.
Cooking
- Incorporate the frozen king prawns and cook until they are fully pink and cooked through.
- Add frozen peas to the boiling pasta 3 minutes before the cooking time is up. Be sure to reserve some cooking water.
- Drain the pasta and peas, adding them directly to the skillet with courgettes and prawns.
Serving
- Mix in the garlic and herb soft cheese along with the lemon zest and juice from the lemon.
- If desired, add some of the reserved pasta cooking water for a creamier sauce.
- Enjoy your meal while it’s fresh and creamy.
Notes
For best results, use freshly squeezed lemon juice and don’t overcook the prawns.
