- Boil the pasta according to the pack instructions.
- In a pan, heat the oil over medium heat.
- Add courgettes and garlic to the pan and fry for 2-3 minutes until they start to soften.
- Incorporate the frozen king prawns and fry until they are cooked through.
- Add the frozen peas to the boiling pasta 3 minutes before the end of the cooking time.
- Remember to reserve some of the cooking water before draining.
- Add the drained pasta and cooked peas to the courgettes and prawns in the pan.
- Stir in the garlic and herb soft cheese along with the lemon zest and juice.
- If you prefer a thinner sauce, add some of the reserved cooking water and serve immediately.
Notes
Pro Tips: Add chili flakes for heat. Ensure prawns are not rubbery by cooking quickly. Mix in milk or cream for a creamier sauce. Pair with garlic bread or salad.
