  • 1/2 cup freshly grated parmesan cheese Adds a nutty flavor.
  • 3 cloves garlic Minced for aromatic depth.
  • 1 tbsp oregano Adds earthiness.
  • 1/4 cup fresh parsley For color and brightness.
  • 1 tsp black pepper For mild heat.
  • 1 tsp salt To enhance flavors.

Method
 

Preparation
  1. Preheat the oven. Set your oven to 350°F/180°C for optimal baking.
  2. Prepare the baking sheet. Line a medium baking sheet with parchment paper for easy cleanup.
  3. Slice the potatoes. Cut them into 1/4-inch thick rounds and place in a bowl.
  4. Toss with olive oil. Use 2 tablespoons of olive oil to coat the potato slices evenly.
  5. Slice the tomatoes. Cut the tomatoes into 1/4-inch thick rounds and set aside.
Layering
  1. Mix the topping. In another bowl, combine the bread crumbs, parmesan cheese, minced garlic, oregano, parsley, black pepper, and a pinch of salt.
  2. Layer the potatoes. Arrange the potato slices in a single layer on the prepared baking sheet and sprinkle with a little salt.
  3. Top with tomatoes. Place the sliced tomatoes over the potatoes and sprinkle with salt again.
  4. Add the breadcrumb mixture. Evenly sprinkle the breadcrumb blend over the tomatoes.
  5. Drizzle with olive oil. Pour the remaining 2 tablespoons of olive oil over the entire dish.
Cooking
  1. Bake to perfection. Place in the oven and cook for approximately 30-40 minutes, checking doneness until the potatoes are tender.
  2. Rest before serving. Let the bake sit for 2 minutes once removed from the oven before slicing and serving.

Notes

For best flavor and texture, select starchy potatoes and don’t skimp on seasoning each layer. You can add other vegetables or swap breadcrumbs for gluten-free options.
