Method
Cook Pasta
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water to cool.
Prepare Salsa
- While the pasta is cooking, prepare the pineapple salsa by chopping the pineapple, red bell pepper, cucumber, cilantro, and red onion into small pieces.
Combine and Dress
- In a mixing bowl, combine the cooled pasta with the pineapple salsa ingredients.
- Add lime juice and olive oil to the pasta salad, season with salt and pepper, and mix well to combine.
Chill and Serve
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
For extra flavor, grill the pineapple before adding it to the salad. You can also substitute quinoa for pasta to make this dish gluten-free and packed with protein.
