Ingredients
  

Pasta Base
  • 2 cups Pasta Any short pasta like rotini or penne
Pineapple Salsa Ingredients
  • 1 cup Fresh pineapple, chopped Preferably fresh for best flavor
  • 1 cup Red bell pepper, chopped
  • 1 cup Cucumber, chopped
  • 1/4 cup Cilantro, chopped Fresh for best flavor
  • 1/4 cup Red onion, chopped
Dressing and Seasoning
  • 2 tablespoons Lime juice Freshly squeezed for best flavor
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper

Method
 

Cook Pasta
  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water to cool.
Prepare Salsa
  1. While the pasta is cooking, prepare the pineapple salsa by chopping the pineapple, red bell pepper, cucumber, cilantro, and red onion into small pieces.
Combine and Dress
  1. In a mixing bowl, combine the cooled pasta with the pineapple salsa ingredients.
  2. Add lime juice and olive oil to the pasta salad, season with salt and pepper, and mix well to combine.
Chill and Serve
  1. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

For extra flavor, grill the pineapple before adding it to the salad. You can also substitute quinoa for pasta to make this dish gluten-free and packed with protein.
