- Finely chop the pineapple into small, bite-sized pieces.
- Remove the seeds from the jalapeño and finely chop it. Adjust the amount based on your spice preference.
- Dice the red onion and bell pepper into small pieces.
- In a medium bowl, combine the pineapple, jalapeño, red onion, and bell pepper.
- Add chopped cilantro and lime juice to the mixture.
- Season with salt and toss gently until all ingredients are well combined.
- Cover and let it sit in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
Notes
For a spicier salsa, leave some seeds in the jalapeño. If using canned pineapple, drain it well. Add a pinch of sugar if the pineapple isn't sweet enough.
