Method
 

Preparation
  1. Finely chop the pineapple into small, bite-sized pieces.
  2. Remove the seeds from the jalapeño and finely chop it. Adjust the amount based on your spice preference.
  3. Dice the red onion and bell pepper into small pieces.
  4. In a medium bowl, combine the pineapple, jalapeño, red onion, and bell pepper.
  5. Add chopped cilantro and lime juice to the mixture.
  6. Season with salt and toss gently until all ingredients are well combined.
  7. Cover and let it sit in the refrigerator for at least 30 minutes to allow flavors to meld before serving.

Notes

For a spicier salsa, leave some seeds in the jalapeño. If using canned pineapple, drain it well. Add a pinch of sugar if the pineapple isn't sweet enough.
