Preparation
  1. Cut and scoop out the three ripe avocados into a mixing bowl. Use a fork to mash them to your desired level of creaminess—smooth or chunky works great!
  2. Mix in the minced jalapeno, diced pineapple, chopped red onion, lime juice, fresh cilantro, sea salt, and cumin. Stir gently until everything is combined.
  3. Taste your guacamole and adjust seasoning or add more lime juice for tanginess or salt for flavor enhancement.
  4. Transfer the Pineapple Guacamole to a serving bowl, garnishing it with extra diced pineapple and chopped cilantro.
  5. Serve immediately alongside your favorite Garden of Eatin’ corn tortilla chips.

Notes

For extra peachiness, let the guacamole sit at room temperature for about 10 minutes before serving. Store covered with plastic wrap directly on the surface to minimize browning. A splash of lime juice can help prevent oxidation.
