Method
 

Preparation
  1. Preheat the oven to 400 degrees F to prepare for baking.
  2. Pat the salmon dry and season it with salt and pepper.
  3. In a small bowl, mix the cherry tomatoes, chopped shallot, olive oil, and remaining salt and pepper.
Baking
  1. Transfer the tossed vegetables to a 9x13 baking dish in an even layer.
  2. Carefully place the salmon filets among the tomatoes in the baking dish.
  3. Spread about 1 Tablespoon of pesto over each salmon filet.
  4. Sprinkle a touch of shaved cheese on each filet for added flavor.
  5. Cook the dish in the preheated oven for 12-15 minutes, until the fish flakes easily.
  6. Optionally, top with fresh basil before serving with your favorite sides.

Notes

Add a squeeze of lemon juice before serving for brightness. Use homemade pesto for an extra depth of flavor. Don’t overcrowd the baking dish to ensure even roasting. Experiment with different types of fish or vegetables as substitutes.
