Method
 

Cooking Pasta
  1. Boil a large pot of salted water over medium heat.
  2. Add the tortellini and cook according to package instructions, typically 3-5 minutes, until tender.
  3. Drain and set aside.
Cooking Chicken
  1. While the tortellini cooks, heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper and add to the skillet.
  3. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
  4. Remove from skillet and allow to rest before slicing.
Combining Ingredients
  1. In the same skillet, add cherry tomatoes and sauté for 2-3 minutes until they start to soften.
  2. Add the cooked tortellini to the skillet, along with the sliced chicken and pesto sauce.
  3. Stir gently to combine and cook for an additional 2 minutes until heated through.
  4. Remove from heat and garnish with fresh basil and grated Parmesan cheese before serving.

Notes

For extra flavor, marinate the chicken in the pesto for an hour before cooking. Use whole-wheat tortellini for a healthier twist that adds fiber. Add a pinch of red pepper flakes for a subtle kick if you like spice.
