- In a liquid measuring cup or small bowl, mix together the peanut butter, tamari, maple syrup, garlic, and optional red pepper flakes.
- Add about half of the lime juice to the mixture and whisk until creamy.
- Gradually whisk in the remaining lime juice until the mixture is fully blended and nicely creamy.
- Sample the dressing; if it’s too tart for your liking, add a teaspoon of maple syrup to sweeten it up.
- Use as desired or store in the refrigerator for up to one week.
Notes
Use fresh garlic for a brighter flavor, and feel free to adjust the sweetness to your taste. This dressing can be made a day in advance for the flavors to meld beautifully. Store leftovers in an airtight container in the fridge.
