Method
 

Preparation
  1. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, rice vinegar, ginger, garlic, red pepper flakes, and water to make the dressing.
  2. In a large bowl, combine the shredded chicken, edamame, cucumber, red bell pepper, shredded carrots, green onions, cilantro, and mint.
Serving
  1. Pour the peanut dressing over the salad.
  2. Toss until well combined.
  3. Sprinkle chopped peanuts and sesame seeds on top. Serve.

Notes

Use rotisserie chicken for convenience. Let the salad sit for a few minutes before serving to enhance flavor. Adjust fresh herbs based on preference.
