Method
 

Preparation
  1. Preheat the oven to 325°F and line a muffin tin with silicone or paper cup liners.
  2. In a medium bowl, mash the ripe bananas until smooth using a potato masher or fork.
  3. Add Greek yogurt, softened butter/ghee, raw honey, eggs, vanilla extract, and peanut butter to the bowl, and stir until well combined.
Mixing
  1. In a small bowl, whisk together oat flour, baking soda, baking powder, and fine sea salt until fully integrated.
  2. Gently fold the dry ingredients into the wet mixture with a spatula until there are no visible lumps, being careful not to over-mix.
Baking
  1. Evenly divide the batter into the prepared muffin tin, filling each cup.
  2. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  3. Once baked, drizzle with extra peanut butter and decorate with banana slices if desired.
Storage
  1. Refrigerate any leftovers in a sealed container; they will stay good for 4 days.

Notes

These muffins are meal prep-friendly and can be frozen for up to three months. Reheat before serving. Consider adding chocolate chips or nuts for extra texture and flavor.
