Method
 

Preparation
  1. Preheat the oven to 350°F and prepare a sheet pan with parchment paper.
  2. In a large bowl, mix the oats, cinnamon, sea salt, applesauce, peanut butter, vanilla, and honey until thoroughly blended.
  3. Spoon the mixture into twelve portions on the prepared baking sheet and slightly flatten each mound into cookie shapes.
Baking
  1. Place the sheet in the oven and bake for 10-12 minutes until the tops are slightly golden.
  2. Remove the cookies from the oven and allow them to cool.
Storage
  1. Keep any remaining cookies in an airtight container in the refrigerator for a week, or freeze them for up to two months.
