Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare a loaf pan by greasing and lining it with parchment paper.

  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. In another bowl, whisk together flour, baking powder, and cinnamon.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. Fold in the diced peaches gently, being careful not to overmix.
  9. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra moisture, drizzle a simple syrup over the cake once cooled. This cake actually tastes better the next day. Measure flour correctly by spooning it into the measuring cup to avoid a dry cake.
