Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. In a large bowl, combine brown sugar and cornstarch until well mixed.
  3. Peel and slice the peaches, then add them to the bowl and stir to combine.
  4. Pour the peach mixture into a greased 9x13 inch baking dish and bake uncovered for 10 minutes.
  5. In a small bowl, mix sour cream and milk, and refrigerate.
  6. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  7. Cut in cold butter until the mixture forms coarse crumbs.
  8. Stir in the sour cream mixture and honey gently until just combined.
  9. Place small handfuls of biscuit dough over the warm peach filling.
  10. Whisk together the egg and milk, then brush over the biscuit layer, sprinkling with sugar and cinnamon.
Baking
  1. Bake uncovered for 45-55 minutes until golden brown and bubbly.
  2. Allow to cool for about 5 minutes before serving.

Notes

Pairs beautifully with vanilla ice cream or whipped cream. This cobbler can be made ahead by prepping the filling and biscuit dough separately.
