Preparation
- Preheat the oven to 350°F.
- In a large bowl, combine brown sugar and cornstarch until well mixed.
- Peel and slice the peaches, then add them to the bowl and stir to combine.
- Pour the peach mixture into a greased 9x13 inch baking dish and bake uncovered for 10 minutes.
- In a small bowl, mix sour cream and milk, and refrigerate.
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- Cut in cold butter until the mixture forms coarse crumbs.
- Stir in the sour cream mixture and honey gently until just combined.
- Place small handfuls of biscuit dough over the warm peach filling.
- Whisk together the egg and milk, then brush over the biscuit layer, sprinkling with sugar and cinnamon.
Baking
- Bake uncovered for 45-55 minutes until golden brown and bubbly.
- Allow to cool for about 5 minutes before serving.
Notes
Pairs beautifully with vanilla ice cream or whipped cream. This cobbler can be made ahead by prepping the filling and biscuit dough separately.
