- Wash the zucchini and slice them into even rounds or half-moons.
- In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until evenly coated.
- Spread the zucchini in a single layer on a baking sheet lined with parchment paper.
- Sprinkle the grated Parmesan cheese generously over the zucchini.
- Bake in the preheated oven for 20-25 minutes or until the zucchini is tender and the cheese is golden brown. The edges should be slightly crisp.
- Remove from the oven and allow to cool for a couple of minutes before serving.
Notes
