Preparation
- Preheat the oven to 425°F and spray a 9×13 baking dish with nonstick cooking spray.
- In the baking dish, mix together the cannellini beans, artichokes, potatoes, shallots, garlic, chicken broth, lemon slices, rosemary, salt, black pepper, and crushed red pepper flakes.
- Pat the chicken thighs dry with a paper towel and season both sides with salt and pepper.
Cooking
- Place chicken thighs skin side up into the pan around the bean and potato mixture.
- Drizzle olive oil over the chicken and rub it in, coating well. Add fresh thyme sprigs on top.
- Transfer the pan to the oven and roast until the chicken is golden brown and cooked through, approximately 45 to 55 minutes, until it reaches an internal temperature of 165°F and the potatoes are fork-tender.
- For crispier skin, broil for the final 2 minutes, keeping a close eye.
Serving
- Let the chicken rest for 5 minutes, then garnish with parsley and freshly grated Parmesan if desired. Serve and enjoy.
