Method
 

Preparation
  1. Preheat the oven to 425°F and spray a 9×13 baking dish with nonstick cooking spray.
  2. In the baking dish, mix together the cannellini beans, artichokes, potatoes, shallots, garlic, chicken broth, lemon slices, rosemary, salt, black pepper, and crushed red pepper flakes.
  3. Pat the chicken thighs dry with a paper towel and season both sides with salt and pepper.
Cooking
  1. Place chicken thighs skin side up into the pan around the bean and potato mixture.
  2. Drizzle olive oil over the chicken and rub it in, coating well. Add fresh thyme sprigs on top.
  3. Transfer the pan to the oven and roast until the chicken is golden brown and cooked through, approximately 45 to 55 minutes, until it reaches an internal temperature of 165°F and the potatoes are fork-tender.
  4. For crispier skin, broil for the final 2 minutes, keeping a close eye.
Serving
  1. Let the chicken rest for 5 minutes, then garnish with parsley and freshly grated Parmesan if desired. Serve and enjoy.

Notes

For the best results, ensure chicken thighs are similarly sized, and consider marinating chicken for additional flavor. You can substitute or add seasonal vegetables for variety.
