Main Ingredients

Method

Preparation
  1. Soak skewers: If using wooden skewers, soak them in water for 20 minutes while you prepare the chicken.
  2. Preheat oven: Set your oven to 450°F and line a rimmed, broiler-safe baking sheet with foil.
  3. Prepare marinade: In a large bowl, whisk together the olive oil, salt, pepper, garlic powder, onion powder, and thyme.
  4. Cut chicken: Cut the chicken breasts into cubes and add them to the bowl.
  5. Toss chicken: Coat the chicken cubes thoroughly with the seasoned olive oil mixture.
  6. Thread chicken: Carefully thread the coated chicken cubes onto skewers.
  7. Arrange on baking sheet: Place the kabobs on the prepared baking sheet, ensuring they have space between each skewer.
  8. Protect skewers: If using wooden skewers, cover the exposed ends with thin strips of foil to prevent burning.
  9. Bake kabobs: Bake the kabobs until cooked through, about 15 minutes.
  10. Broil for browning: Switch the oven to broil, placing the baking sheet under the broiler until the chicken is browned, about 1 minute.
  11. Serve immediately: Remove from the oven and serve hot with your favorite sides.

Notes

These kabobs are perfect for meal prep and can be marinated the night before. Store leftovers in an airtight container in the refrigerator for up to three days. For best results, don't overcrowd the skewers.
