  • 1 cup sweet cherry tomatoes Halved
  • 1 medium English cucumber Diced
  • 1 medium yellow bell pepper Diced
  • 1 cup mini pearl mozzarella balls
Dressing
  • 1 cup basil pesto Homemade or store-bought

Method
 

Preparation
  1. Bring a large pot of salted water to a boil and add orzo. Cook al-dente according to package instructions, reducing the cooking time by 1 - 2 minutes.
  2. Strain the orzo and run under cold water to stop further cooking. Set aside.
Assembly
  1. In a large bowl, toss the cooked orzo, cucumbers, tomatoes, bell pepper, and mini pearl mozzarella balls.
  2. Drizzle the pesto over the salad and toss to coat. Enjoy!

Notes

For a protein boost, consider adding grilled chicken or chickpeas. Let the salad chill before serving for best flavor integration.
