Method
 

Preparation
  1. In a large nonstick pot, heat oil over medium-high heat.
  2. Add sausages and sear on both sides until browned. Remove from pot and keep aside.
  3. In the same pot, add onions, green peppers, red peppers, and garlic. Sauté for 3-4 minutes until soft.
Cooking
  1. Pour in chicken broth, add tomato paste, Cajun seasoning, paprika, red chili flakes, salt, and pepper. Bring to a boil.
  2. Reduce heat to medium-low and stir in the cooked rice.
  3. Finally, add the cooked sausages back to the pot and mix well.
Serving
  1. If desired, garnish with parsley or cilantro. Enjoy!

Notes

This dish can be easily meal prepped and stored for quick access during the week. Store leftovers in airtight containers and refrigerate for up to three days.
