  • 1 1/2 cups Water Needed for cooking the rice properly.
  • 1/4 cup Pineapple juice Enhances the tropical flavor profile.
  • 1/4 cup Cilantro (Finely chopped, For garnish) Adds freshness and color.

Method
 

Cooking Steps
  1. Heat the oils in a large nonstick pot over medium-high heat.
  2. Add garlic and jalapeños and sauté for about 1 minute.
  3. Add crushed pineapples, salt, pepper, red chili flakes, lemon juice, rice, water, and pineapple juice, then mix until fully combined.
  4. Cover the pot and reduce to medium heat.
  5. Cook for about 15 minutes or until rice is fully cooked and water is absorbed.
  6. Turn off the heat and remove the lid. Allow the rice to rest for about 10 minutes.
  7. Fluff the rice with a fork and garnish with cilantro. Add more lemon juice on top if desired.

Notes

For best results, use coconut oil instead of butter for a tropical flavor. You can also prepare ingredients ahead of time and refrigerate for quick meal prep. Add cooked chicken or shrimp for a heartier meal.
