Method
 

Preparation
  1. Heat avocado oil in a large skillet over medium heat.
  2. Add diced onion and sweet potato, and cook until the onion softens, about 5 minutes.
  3. Stir in minced garlic, diced red and yellow bell peppers, and spices, cooking for 1 minute.
Cooking
  1. Combine rinsed quinoa, fresh diced tomatoes, canned diced tomatoes, black beans, corn, and vegetable stock in the skillet.
  2. Bring to a boil, then reduce heat to medium-low.
  3. Cover and simmer for 20 minutes, until quinoa absorbs most of the liquid.
Serving
  1. Once cooked, stir in lime juice, cilantro, and season with salt and pepper to taste.
  2. Serve with extra cilantro, lime wedges, and optional avocado or cheese on top.

Notes

For best results, choose fresh ingredients, rinse quinoa, and adjust seasonings to taste. Leftovers are versatile and can be transformed into wraps or bowl meals.
