Ingredients
  

For the eggplant base
  • 2 medium Eggplants Provides a hearty, low-carb base
  • 2 tablespoons Olive oil Adds richness and aids in roasting

For the toppings
  • 1 cup Pizza sauce Zesty foundation for classic pizza flavor
  • 1 cup Mozzarella cheese Melts beautifully for a gooey texture
  • 1/2 cup Cheddar cheese Adds a sharper flavor
  • 1 teaspoon Italian seasoning Infuses the dish with aromatic herbs

Method
 

Preparation
  1. Preheat the oven to 450°F (232°C).
  2. Arrange eggplant slices on a baking tray lined with parchment paper.
  3. Generously drizzle olive oil over the eggplant slices.
  4. Sprinkle salt and pepper to taste over the slices.
  5. Toss for even coating of olive oil, salt, and pepper.
  6. Bake in the preheated oven for 15 minutes or until golden brown.
Topping and Broiling
  1. Remove the tray from the oven and spread pizza sauce on each eggplant slice.
  2. Sprinkle mozzarella and cheddar cheese evenly over the sauce.
  3. Toss Italian seasoning over each slice.
  4. Return the tray to the oven and broil at 500°F (260°C) for about 5 minutes, or until the cheese is fully melted and bubbly.
  5. Garnish with finely chopped parsley or basil if desired, and serve immediately.

Notes

Allow the pizza to sit for a couple of minutes before slicing for easier serving. Store leftovers in an airtight container in the fridge for up to three days.
