Preparation
  1. Preheat your oven to 350 degrees F.
  2. Spray a 9x13 inch pan with nonstick spray and line with parchment paper for easy removal.
Cooking
  1. In a large bowl, whisk together melted butter, granulated sugar, and dark brown sugar until dissolved.
  2. Incorporate the eggs and vanilla extract, mixing until smooth and creamy.
  3. Sift in the flour and cocoa powder, then add kosher salt and espresso powder if using, stirring until just combined.
  4. Fold in 1 cup of chopped chocolate gently into the batter.
  5. Pour the brownie mixture into the prepared pan and spread it evenly; sprinkle the remaining 1/4 cup of chopped chocolate on top.
  6. Bake for 25-30 minutes on the middle rack until just set to touch.
  7. Allow the brownies to cool completely before cutting into squares.
