Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line 2 cookie sheets with silicone or parchment paper.
  3. In a large mixing bowl, combine nut butter, eggs, and vanilla extract.
Cooking
  1. Stir in brown sugar, cocoa powder, baking soda, and salt until completely mixed, about 1 minute.
  2. Gently fold in the chocolate chips.
  3. Using a tablespoon-sized cookie scoop, drop the dough onto prepared cookie sheets about 2 inches apart.
  4. Bake for 8-9 minutes until puffed and crinkled; they will still be soft.
  5. Let stand on the sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature eggs. Don’t overbake; the cookies should remain soft when you take them out.
