Preparation
- Process the dates. Place pitted dates in a large food processor and process on high for about 45 seconds, or until a ball forms.
- Add the pecans. Add the pecans and process until the pecans are finely grounded and form a ball with the dates.
- Add the remaining ingredients. Add old-fashioned oats, ground cinnamon, pure maple syrup, and a pinch of salt; scrape down the sides of the processor bowl if necessary.
- Process until combined. Process the mixture until well combined and has a dough-like consistency.
- Shape the bites. Using a small ice cream scoop or a 1 tablespoon measuring spoon, roll the mix into balls with your hands.
- Refrigerate. Place the bites in the fridge for 15 to 20 minutes to firm up.
- Store properly. Store in an airtight container in the refrigerator for up to one week.
Notes
For extra flavor, toast the pecans in a dry skillet for a few minutes before processing. Chill the mixture longer for firmer bites, ideal for warm summer days.
