  1. Process the dates. Place pitted dates in a large food processor and process on high for about 45 seconds, or until a ball forms.
  2. Add the pecans. Add the pecans and process until the pecans are finely grounded and form a ball with the dates.
  3. Add the remaining ingredients. Add old-fashioned oats, ground cinnamon, pure maple syrup, and a pinch of salt; scrape down the sides of the processor bowl if necessary.
  4. Process until combined. Process the mixture until well combined and has a dough-like consistency.
  5. Shape the bites. Using a small ice cream scoop or a 1 tablespoon measuring spoon, roll the mix into balls with your hands.
  6. Refrigerate. Place the bites in the fridge for 15 to 20 minutes to firm up.
  7. Store properly. Store in an airtight container in the refrigerator for up to one week.

Notes

For extra flavor, toast the pecans in a dry skillet for a few minutes before processing. Chill the mixture longer for firmer bites, ideal for warm summer days.
