No Bake Peanut Butter Banana Bites

Base Ingredients
  • 2 medium bananas Peel and slice into 1/2 inch coins.
  • 1/2 cup peanut butter Creamy or crunchy based on preference.
  • 1 cup mini pretzels For topping.
  • 1 cup dark chocolate chips For melting and coating.

Method
 

Preparation
  1. Peel and slice bananas into 1/2 inch coins.
  2. Place banana slices on a piece of parchment paper lined cookie sheet with some space in between each slice.
  3. Spread a little scoop of peanut butter on each banana slice.
  4. Gently press a mini pretzel on top of the peanut butter.
  5. Freeze the cookie sheet for 1 hour to set.
Coating
  1. In a microwave-safe bowl, combine chocolate chips and 1-2 tablespoons of peanut butter.
  2. Microwave for 30 seconds, stir, then microwave again for 15-20 seconds until melted.
  3. Dip each frozen banana bite into the melted chocolate until half is covered.
  4. Optionally, sprinkle sea salt flakes on top.
  5. Freeze again for 30 minutes to an hour to set.

Notes

For an extra flavor boost, use flavored peanut butter such as cinnamon or chocolate. Ensure bananas are ripe for best results. Store in an airtight container to keep the pretzels crunchy.
