Method
 

Preparation
  1. Preheat the oven to 350°F and prepare a roasting pan with 2 inches of water.
  2. Grease a 9-inch springform pan and wrap it with two layers of aluminum foil.
Making the Cheesecake
  1. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom and sides of the springform pan.
  2. In a large bowl, use a hand mixer to beat the cream cheese and sugar until smooth.
  3. Mix in the milk first, then add eggs one at a time, integrating each thoroughly.
  4. Stir in the sour cream, vanilla, lemon juice and zest, and flour until fully combined.
  5. Pour the cheesecake mixture into the prepared crust.
  6. Place in the center of the oven and bake for 1 hour.
  7. Turn off the oven and let the cheesecake cool in the oven for 2-3 hours with the door closed.
  8. Transfer to the refrigerator to chill until ready to serve, topping with cherry filling if desired.

Notes

Use room temperature ingredients for smooth blending. Don't skip the cooling step to prevent cracks. Consider flavor variations like adding citrus or spices. Chill for at least 4 hours for the best texture before serving.
