Preparation
- Heat a large pot over medium heat and add a splash of vegetable oil.
- Add minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
- Add sliced mushrooms and cook for about 5 minutes until they soften.
- Pour in vegetable broth and bring to a simmer.
- Carefully add diced tofu to the pot and allow to cook for an additional 5-7 minutes.
- Stir in soy sauce and cook for another 2 minutes.
- Remove from heat and garnish with sliced scallions before serving.
Notes
Feel free to substitute tofu with tempeh for added protein. Add a splash of sesame oil at the end for a flavor boost.
