  • 2 cups Mushrooms, sliced Fresh mushrooms for the best flavor
  • 1 block Firm Tofu, diced Add towards the end of cooking
  • 4 cups Vegetable Broth Flavorful base for the soup
  • 3 cloves Garlic, minced Adds a fragrant depth
  • 1 inch Ginger, minced Brings warmth and spice
  • 2 tablespoons Soy Sauce Enhances the umami taste
  • 3 stalks Scallions, sliced For garnishing

Method
 

Preparation
  1. Heat a large pot over medium heat and add a splash of vegetable oil.
  2. Add minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  3. Add sliced mushrooms and cook for about 5 minutes until they soften.
  4. Pour in vegetable broth and bring to a simmer.
  5. Carefully add diced tofu to the pot and allow to cook for an additional 5-7 minutes.
  6. Stir in soy sauce and cook for another 2 minutes.
  7. Remove from heat and garnish with sliced scallions before serving.

Notes

Feel free to substitute tofu with tempeh for added protein. Add a splash of sesame oil at the end for a flavor boost.
