Preparation
- Preheat the oven to 425°F.
- Peel the sweet potatoes and cut them into small to medium cubes.
- On a greased baking pan, toss the sweet potato cubes evenly in neutral cooking oil.
Roasting
- Place the sweet potatoes on the top rack of the oven and roast for 12 to 15 minutes, flipping halfway through.
- While the sweet potatoes are roasting, mix the miso glaze ingredients together in a bowl.
Finishing
- Once the sweet potatoes are roasted, let them cool for 5 minutes if necessary, then toss them gently with the glaze.
- Return the glazed sweet potatoes to the baking sheet and roast for an additional 5 minutes.
- Optionally garnish with sesame seeds before serving.
Notes
For extra flavor, marinate the sweet potatoes in the glaze before roasting. Use parchment paper on the baking pan for easy cleanup.
