Method
 

Preparation
  1. Preheat the oven to 425°F.
  2. Peel the sweet potatoes and cut them into small to medium cubes.
  3. On a greased baking pan, toss the sweet potato cubes evenly in neutral cooking oil.
Roasting
  1. Place the sweet potatoes on the top rack of the oven and roast for 12 to 15 minutes, flipping halfway through.
  2. While the sweet potatoes are roasting, mix the miso glaze ingredients together in a bowl.
Finishing
  1. Once the sweet potatoes are roasted, let them cool for 5 minutes if necessary, then toss them gently with the glaze.
  2. Return the glazed sweet potatoes to the baking sheet and roast for an additional 5 minutes.
  3. Optionally garnish with sesame seeds before serving.

Notes

For extra flavor, marinate the sweet potatoes in the glaze before roasting. Use parchment paper on the baking pan for easy cleanup.
