Preparation
- Preheat the oven to 350°F (180°C or 170°C fan forced).
- Line an 8-inch square baking pan with aluminum foil or baking paper, leaving an overhang, or lightly grease the pan.
- In a large bowl, melt the chopped chocolate and butter together using a microwave on medium power or a double boiler until smooth.
- Stir in the white sugar and brown sugar until well combined.
- Whisk in the eggs and vanilla extract until the mixture is smooth and lump-free.
- Gently fold in the flour, cocoa powder, and salt until just combined.
- Incorporate the milk chocolate chips into the batter for extra sweetness and texture.
- Transfer the batter into the prepared pan and smooth the top with a spatula.
Baking
- Place in the oven and bake for 22-27 minutes, or until the top appears set and a toothpick inserted comes out with a few damp crumbs.
Cooling
- Allow the brownies to cool in the pan for about 3 hours before lifting them out and slicing into squares.

For best results, use high-quality chocolate, and avoid overmixing. Let brownies cool completely for cleaner cuts.
