Ingredients

Cookie Dough Ingredients
  • 1 cup raw pecans or walnuts Finely chopped for best flavor integration.
  • 1 cup vegan butter Use room temperature for a smoother dough.
  • 1/2 cup powdered sugar Sweetens the cookies and creates a soft texture.
  • 1 teaspoon vanilla extract Adds a warm aromatic flavor.
  • 1/2 teaspoon almond extract Optional, enhances nutty flavor.
  • 1/4 teaspoon fine sea salt Balances sweetness and enhances flavor.
  • 2 cups all-purpose flour Forms the base for the cookie dough.
For Coating
  • 1/2 cup powdered sugar For rolling the cookies after baking.

Method

Preparation
  1. Finely chop the raw pecans or walnuts to enhance their flavor and integrate smoothly into the dough.
  2. In a large mixing bowl, beat the vegan butter with powdered sugar. Then, add vanilla extract, almond extract, and sea salt.
  3. Gradually mix in the flour and nuts until just combined.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Scoop spoonfuls of dough onto a prepared cookie sheet.
  3. Bake until set and starting to lightly brown, about 15-20 minutes.
  4. Cool slightly before rolling in powdered sugar.

Notes

For a deeper flavor, toast the nuts before chopping. Consider rolling the cookies in powdered sugar while still warm for a better coating. Experiment with other nut varieties, like hazelnuts or almonds, for a different twist.
