Method
 

Preparation
  1. Preheat the oven to 400 degrees F for roasting the sweet potatoes.
  2. Place the sweet potatoes on a parchment-lined baking sheet and prick them with a fork a few times.
  3. Roast in the oven for 45 minutes or until tender.
  4. Alternatively, you can microwave them for 8 minutes, flipping halfway through.
Cooking the Filling
  1. When the sweet potatoes have about 10-15 minutes left, heat the oil in a skillet over medium heat.
  2. Add the diced onion and red bell pepper to the skillet and cook for 5 minutes until they are fragrant and translucent.
  3. Stir in the minced garlic, black beans, corn, tomato paste, and all the spices, cooking for another 5 minutes.
Assembly
  1. Slice the cooked sweet potatoes in half and fill them with the black bean mixture.
