Preparation
- Preheat the oven to 350°F (175°C).
Cooking
- In a large pan, heat oil over medium heat and sauté onion, red bell pepper, and garlic for 8 minutes.
- Add the cooked chicken, beans, corn, taco seasoning, salt, and pepper, stirring to combine.
- Incorporate diced tomatoes and tomato paste.
- In a rectangular oven dish, layer 1/3 of the chicken-bean mixture, half of the cooked rice, and repeat.
- Finish with a layer of meat topped with cheddar cheese.
- Bake covered for 30 minutes, uncover, and bake for an additional 10-15 minutes until cheese is golden.
Serving
- Garnish with cilantro and serve with lime wedges.
