  • 1 lb ground chorizo Adds a spicy, flavorful kick to the casserole.

  • 1 cup salsa Brings moisture and zesty flavor.
  • 6 large eggs Creates fluffy and rich texture.
  • 1/2 cup milk Helps bind the egg mixture.
  • 1 tsp salt Enhances all flavors.
  • 8 oz corn tortillas Serves as the base.
  • 2 cups Mexican cheese Melts beautifully, adding richness.
  • 1 medium avocado Provides freshness as a garnish.
  • 1/4 cup cilantro Adds brightness as a garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a large skillet over medium-high heat, brown the ground chorizo until it's three-quarters cooked, breaking it up as it cooks.
  3. Carefully pour off the excess grease from the pan.
  4. Stir in the sliced pepper, diced onion, and ground cumin, cooking until softened, about 5 minutes.
  5. Mix in the salsa with the chorizo and vegetables.
  6. In a large bowl, whisk together the eggs, milk, and salt until well combined.
Assembly
  1. Place half of the tortilla quarters at the bottom of a greased 9 by 13-inch baking dish.
  2. Spread half of the chorizo mixture over the tortilla layer.
  3. Pour half of the egg mixture on top of the chorizo.
  4. Sprinkle half of the grated Mexican cheese over the casserole.
  5. Repeat the layering with the remaining tortillas, chorizo, egg mixture, and cheese.
Cooking
  1. Cover the baking dish with aluminum foil and bake for 40-45 minutes or until the eggs are set.
  2. If the eggs are not quite set, uncover and bake for an additional 10-15 minutes.
  3. Once out of the oven, garnish with sliced avocado and cilantro before serving.

Notes

This casserole can be prepared ahead of time and stored in the refrigerator before baking. It’s delicious topped with salsa or hot sauce and paired with fruit.
