Method
 

Preparation
  1. Bring a large pot of water to boil and add a generous pinch of salt.
  2. Add green beans and cook for 3-4 minutes until crispy tender.
  3. Remove green beans with tongs and place them in a bowl filled with cold water and ice.
  4. While green beans are cooling, slice tomatoes in half or quarters.
  5. Combine sliced tomatoes with crushed garlic, fresh thyme, oregano, flaky sea salt, black pepper, and olive oil.
  6. Gently toss tomatoes until coated and taste for seasoning; add vinegar if desired.
Assembly
  1. Place the cooled green beans on a serving plate, top with marinated tomatoes, and crumble feta cheese.
  2. Drizzle with additional olive oil, sprinkle with more flaky sea salt, and serve immediately.

Notes

Let the salad sit for at least 15 minutes to allow flavors to meld. For extra flavor, try adding a splash of balsamic vinegar to the tomatoes.
