  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil 1 Tbsp for chicken, 1 Tbsp for vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 medium yellow onion, sliced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1 jar jarred roasted red peppers, sliced
  • 1 cup mozzarella cheese, grated
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped For garnish

Method
 

Preparation
  1. Preheat the oven to 400 degrees F.
  2. Slice the chicken breasts horizontally and place them in a medium bowl.
  3. Drizzle with 1 Tbsp of olive oil and season with garlic powder, oregano, Kosher salt, and fresh ground pepper.
  4. Transfer the chicken to a 9 x 13-inch baking dish.
Cooking
  1. Top the chicken with zucchini, tomatoes, onions, roasted red peppers, and kalamata olives.
  2. Season again with Kosher salt and fresh ground pepper, then drizzle with the remaining 1 Tbsp of olive oil.
  3. Top with crumbled feta and grated mozzarella cheeses.
  4. Place the baking dish in the preheated oven and bake uncovered for about 20 minutes or until the chicken is done.
  5. Ensure the chicken’s internal temperature reaches at least 165 degrees F using an instant-read thermometer.
  6. Broil for 2-3 minutes to brown the cheese, if desired.
  7. Remove from the oven and allow to rest for 5 – 10 minutes before serving.

Notes

This dish is perfect for meal prep and can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Serve warm for the best taste.
