Preparation
- Preheat the oven to 400 degrees F.
- Slice the chicken breasts horizontally and place them in a medium bowl.
- Drizzle with 1 Tbsp of olive oil and season with garlic powder, oregano, Kosher salt, and fresh ground pepper.
- Transfer the chicken to a 9 x 13-inch baking dish.
Cooking
- Top the chicken with zucchini, tomatoes, onions, roasted red peppers, and kalamata olives.
- Season again with Kosher salt and fresh ground pepper, then drizzle with the remaining 1 Tbsp of olive oil.
- Top with crumbled feta and grated mozzarella cheeses.
- Place the baking dish in the preheated oven and bake uncovered for about 20 minutes or until the chicken is done.
- Ensure the chicken’s internal temperature reaches at least 165 degrees F using an instant-read thermometer.
- Broil for 2-3 minutes to brown the cheese, if desired.
- Remove from the oven and allow to rest for 5 – 10 minutes before serving.
Notes
This dish is perfect for meal prep and can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Serve warm for the best taste.
