Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) to prepare for baking.
  2. Place the feta cheese in a small baking dish.
  3. In a medium mixing bowl, combine olives, sun-dried tomatoes, olive oil, minced garlic, oregano, thyme, basil, red pepper flakes, salt, and pepper. Stir until well combined.
Cooking
  1. Pour the mixture over the feta cheese, ensuring it’s well coated in the oil, and push most of the olives and tomatoes to the side.
  2. Place the baking dish in the oven and bake for 20 to 25 minutes until the feta is softened.
  3. For additional browning, turn on the top broiler for 1 to 2 minutes, watching closely to prevent burning.
  4. Remove from the oven, garnish with freshly chopped parsley, and serve warm with crostini or sliced cucumbers.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not freeze as texture may change.
