Preparation
- Preheat the oven to 350°F.
- In a large mixing bowl, combine the ground beef, cracker crumbs, onion, garlic powder, egg, milk, ketchup, Worcestershire sauce, and seasoning salt blend. Mix just until well incorporated.
- Press the meat mixture evenly into a 13'x9' baking dish.
Baking
- Bake for 25-30 minutes, or until nearly cooked through.
- If using store-bought mashed potatoes, heat according to the package instructions and stir in the cheddar cheese. If made from scratch, prepare your mashed potatoes and stir in the cheddar cheese.
- Once the meatloaf is cooked, pour off excess grease, and spread the mashed potatoes over the meatloaf.
- Sprinkle shredded cheddar cheese on top. Mix cracker crumbs with melted butter and sprinkle on top.
- Return to the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Serving
- Cool for 5 minutes before slicing and serving.
