Preparation
- Peel and cut the sweet potatoes into 2-inch cubes.
- In a large nonstick pot, add the sweet potatoes and enough water to cover them.
- Cook on medium-high heat until tender, about 15–20 minutes.
- Drain the cooked sweet potatoes and return them to the pot with the heat turned off.
Mixing
- To the sweet potatoes, add cinnamon, ginger, nutmeg, salt, butter, honey, and milk.
- Use a hand mixer to whip everything together, adding milk gradually (start with 1/4 cup and adjust to your desired consistency).
Serving
- Garnish with finely chopped parsley and a few slices of butter. Enjoy!
Notes
Can be made ahead of time and reheats well. Store leftovers in an airtight container in the fridge for up to 3 days.
