Preparation
  1. In a mixing bowl, combine shrimp with lime juice, salt, and pepper. Let marinate for 10 minutes.
  2. While shrimp marinates, chop mango, pineapple, red bell pepper, and cilantro.
Cooking
  1. Heat a skillet over medium heat and cook shrimp for about 3-4 minutes until they turn pink and opaque.
Assembly
  1. In the same bowl, combine chopped mango, pineapple, red bell pepper, and cooked shrimp.
  2. Drizzle olive oil over the mixture and toss gently to combine.
  3. Adjust seasoning with more salt and pepper, if needed.
  4. Serve chilled or at room temperature, garnished with additional cilantro if desired.

Notes
