Preparation
- Drain and rinse the black beans. Set aside on a paper towel lined plate to dry.
- Preheat the oven to 400°F and prepare the taco shells.
- Arrange 8-10 taco shells in a 9 x 13 inch casserole dish and bake.
Cooking
- Sauté ground beef and diced onions over medium-high heat until browned, about 8-10 minutes.
- Drain any excess grease from the meat.
- Stir in taco seasoning, diced tomatoes, and beef broth.
- Bring to a boil, then reduce to a simmer for 1-2 minutes.
- Stir in softened cream cheese until melted and combined.
Assembly
- Spoon black beans into the bottom of each taco shell, then top with beef mixture.
- Sprinkle shredded cheddar cheese generously over the top.
- Bake uncovered for 7-10 minutes until cheese is melted.
- Remove from oven, add desired toppings, and serve.
Notes
For extra crunch, broil the tacos for 1-2 minutes after baking. Try adding fresh lime juice for a zesty finish.
