  1. Dissolve the honey. Add the honey and ½ cup of the water to a small saucepan. Heat over medium-low and simmer for 1 to 2 minutes, whisking until the honey is fully dissolved. Remove from heat.
  2. Mix the lemonade. Pour the honey water into a large measuring cup or pitcher. Add the lemon juice, lemon zest, and remaining 2 ½ cups of cold water. Whisk to combine.
  3. Fill the molds. Pour evenly into popsicle molds, leaving about ¼ inch of space at the top for expansion. Insert the popsicle sticks. Makes 8 to 10 popsicles depending on mold size.
  4. Freeze. Freeze for at least 4 hours, or overnight for best results.
  5. Enjoy! Remove the popsicles from molds and savor the refreshing flavor.
