Preparation
- Dissolve the honey by adding it and 1/2 cup of the cold water to a small saucepan. Heat over medium-low for 1 to 2 minutes, whisking until fully dissolved.
- Pour the honey water into a large measuring cup. Add the lemon juice, lemon zest, and the remaining 2 1/2 cups of cold water. Whisk to combine.
- Pour the mixture evenly into popsicle molds, leaving about 1/4 inch of space at the top for expansion. Insert popsicle sticks.
- Freeze the molds for at least 4 hours, or overnight for the best results.
- Once frozen, remove the popsicles from the molds and enjoy!
Notes
For best results, freeze the popsicles overnight. You can add fresh fruit slices or layer different juices for a variation in flavor and decoration.
