  • 1 pound chicken breast Provides lean protein for a filling meal.
  • to taste salt Enhances flavor throughout the dish.
  • to taste pepper Adds a touch of spice.
  • 8 ounces spaghetti The main carbohydrate source for this dish.
  • 1 cup pasta water Helps create a creamy sauce when combined with other ingredients.
  • 1 tablespoon lemon zest Brightens the flavor profile and adds freshness.
  • 2 tablespoons lemon juice Provides acidity and enhances the overall taste.
  • 1 cup ricotta Offers creaminess and a rich texture to the dish.
  • 1/2 cup Parmesan cheese Adds a savory note and can be used as a garnish.
  • 2 cups spinach Adds color, flavor, and nutrition.

Method

Preparation
  1. Cook pasta according to package instructions, reserving 1 cup of pasta water prior to draining. Set aside.
  2. As the pasta cooks, heat 2 tablespoons of oil in a cast iron skillet over medium-high heat.
  3. Butterfly the chicken breast and cut the seam to create 2 thinner slices, each about an inch thick. Season each side with desired amounts of salt and pepper.
Cooking
  1. Sear the chicken in the heated skillet for about 3-5 minutes on each side. Once each side is a nice, golden brown and the middle is cooked, set the chicken aside.
  2. Reduce the heat of the skillet to medium low. Add half of the reserved water, lemon zest, lemon juice, ricotta, Parmesan, and drained pasta. Toss evenly to coat. Add additional reserved water as needed to obtain desired consistency.
  3. Slice the chicken into strips and top the pasta with it. Finally, toss in the spinach and heat until it’s just wilted.
  4. Garnish with additional Parmesan if desired, and serve.

Notes

Pro tips include letting ricotta sit at room temperature for a smoother texture and considering minced garlic for extra flavor.
