Preparation
  1. Rinse the brown rice thoroughly to remove excess starch.
  2. In a medium saucepan, combine the rice, coconut water, salt, and coconut oil.
Cooking
  1. Heat the mixture over medium-high heat until it reaches a rolling boil.
  2. Cover with a tight-fitting lid, reduce heat to low, and simmer for 45 minutes.
  3. Occasionally check the rice to ensure it does not dry out or stick, adding more coconut water if needed.
  4. Remove the saucepan from heat and let it sit, covered, for a few minutes.
Final Touches
  1. Fluff the rice with a fork, then add the lemon zest and juice.
  2. Cover and let the rice rest for 10 minutes to allow the flavors to meld.
  3. Stir in the Italian parsley before serving. Enjoy warm!

Notes

For extra flavor, consider adding crushed red pepper flakes. This dish stores well in the fridge for up to 5 days and can also be frozen for 3 months.
