Preparation
- Combine water, sugar, and lemon peels in a small saucepan and bring to a simmer, stirring until the sugar is melted. Do not let it boil.
- Pour the mixture into a shallow metal pan or glass dish and let it cool to room temperature.
- Remove and discard the lemon peels, then stir in the lemon juice.
Freezing
- Cover the container with a lid or plastic wrap and freeze for 45 minutes or until ice crystals form around the edges.
- Use a fork to lightly break up the ice crystals and thoroughly stir the mixture.
- Continue freezing, covering, and stirring every 30 to 45 minutes until the granita is frozen to a light, fluffy consistency, which may take 5 to 6 hours.
Serving
- To serve, use a fork or spoon to scrape the lemon granita into serving dishes.
- Store leftovers in an airtight container to prevent freezer burn and consume within 1 to 2 weeks.
Notes
For best results, scrape and stir the granita every 30 to 45 minutes during the freezing process. Serve in chilled bowls or glasses, and consider adding a sprig of mint on top.
